Once the butter is mixed in, it’s time to add the wet ingredients.
The next step in the recipe is to stir two beaten eggs into the mixture using a wooden spoon.
I mixed in my eggs before I started combining my dry ingredients so it was easy to grab and mix.
After that, it’s time to add the buttermilk, again using a wooden spoon to mix the ingredients together until it forms “a sticky mass.” The recipe notes that you should add an extra teaspoon of buttermilk one at a time if the mixture isn’t the right consistency. I ended up adding an extra teaspoon to my dough before it looked right.
Mixing everything together was definitely the hardest part of the recipe, because the dough was stiff thanks to all the butter. My hand started to hurt and I had to take a few breaks as I mixed.
I also thought I was done once or twice and then realized there was loose flour in the bottom of the bowl that hadn’t been incorporated into the batter. I think if I had a bigger spoon I could mix it more easily.
